Canning Dehydrated Cherry Tomatoes

Preserving dehydrated cherry tomatoes in olive oil enhances their flavor and creates a versatile ingredient for various dishes. The process involves selecting ripe tomatoes, washing, drying, and dehydrating them at low temperatures to concentrate their sweetness and tanginess. Once dehydrated, the tomatoes are preserved in high-quality extra virgin olive oil, which extends their shelf life and infuses them with rich flavors.

Adding herbs and garlic can further enhance the taste. Stored in sterilized jars, these tomatoes absorb the oil's aromatic qualities over time, making them visually appealing and flavorful. This preservation method celebrates seasonal ingredients and sustainability, allowing enjoyment of summer flavors year-round, whether as a topping, in Mediterranean dishes, or on their own.
